Ingredients: liver, lung, heart, omentum (crosslinked membrane that surrounds the small intestine), sweetbreads and intestines of suckling kid or lamb, garlic, bacon, parsley, pepper, salt.
Preparation: Wash and leave the entrails for about 12 hours in cold water, salt and a few drops of lemon juice. Dry with a clean, chop the giblets with the exception of the gut and omentum. Reduce in part the omentum into pieces and each of them put a piece of liver, lung, heart, bacon, sweetbreads, a clove of garlic, parsley and chilli liking, then add salt and pepper. Wrap each piece and tie with strong guts. Fry the rolls and then, to taste, cook them in tomato sauce.
